Another dish I enjoy at breakfast time is a syn free omelette calzone. This would be an alternative to having a sweet omelette for breakfast
I find eggs a great breakfast fuel to start the day
As well as being tasty and versatile, they are also high in protein
A calzone is usually made from dough and resembles a pizza folded in half
Instead of using dough, I have used eggs to make this slimming world friendly
Syn Free Omelette Calzone
Ingredients
3 eggs
A splash of milk
Speedy filling of choice (mushrooms, onions, peppers and spinach are usually my choice)
Tomato puree
30g cheese (Healthy Extra A)
Along with your ingredients, you will need 2 frying pans. 1 to make your omelette and 1 to make your filings. As well as a baking tray
Mix your eggs and milk together and they will go into the larger of the 2 frying pans. Always make sure you use your low calorie cooking spray on your pans before you use them. Also, ensure they have heated up before you start cooking
Your eggs will be cooked on medium heat for about 10 minutes, do not attempt to touch them or flip them. Just leave them to cook through
Cooking
In your second frying pan cook your filling. Again ensure your low calorie oil is heated up first
I always like to add some seasoning and I find the SpiceNTice Chimichurri a great compliment for this. Italian seasoning also works well and tastes great giving an authentic calzone flavour
Once your omelette is cooked through, you will need to transfer it to a baking sheet. I like to line mine with tin foil for ease of flipping and cleaning after
Your filling will then be transferred into half of the omelette ready to be folded in half
Flip it in half and coat the top half with tomato puree and your healthy extra A allowance
Transfer your baking tray to your grill or oven and let the cheese melt
Serve on its own or with a syn free side like baked beans
Try and always use syn free fillings to bulk out the omelette calzone.
Bacon with fat removed or syn free vegetarian sausages cut up also work well

Light mozzarella is a good option and melts lovely under the grill
Using eggs and cheese to make a chaffle could be something else you would enjoy
