Rice is a free food with slimming world, meaning you don’t need to syn it
With that being said it is easy to overeat free foods, so it is good to consider portion sizes
Most dry rice and pasta packets will tell you how many grams are in an individual portion. This is easy to weigh out before you start cooking
Risotto will most often have white wine in it. This is something that can be left out and it does still taste fantastic
A lot of people don’t drink wine generally and it has a high syn value for us slimming worlders. So it is nice to find a dish which works quite well without it
Syn Free Mushroom Risotto
Ingredients For Mushroom Risotto
100g Arborio rice (free)
1 litre vegetable stock (free)
150 chopped mushrooms (speed)
2/3 chopped garlic cloves (free)
1 chopped white onion (speed)
A handful of garden peas (free)
30g fresh parmesan cheese (1 Healthy Extra A choice)
Cooking instructions
I find getting all the vegetables prepped first is the easiest way to start most meals. With the speed vegetables, you don’t necessarily need to be so accurate with weighing them as the more the merrier to a degree.
Use a dish which can contain in excess of 1 litre. I like to use enamel dishes as I find them lighter to transfer and easier to clean. The one to use for risotto will need to have a lid to stop it from drying out in the oven.
Add your rice with the stock and mix with the chopped garlic to try and evenly distribute it. Put in your onions and peas and mix that in with it as well.
I find that the mushrooms will float to the top until you start cooking and then sink as they absorb the stock. Putting these in last will make it less messy to mix.
Start with a preheated oven, 180 degrees is a good temperature to cook with.
You will want to start by cooking for 20 minutes, then stir the mixture and then put it back in for another 20 minutes.
Then you will want to add some of your parmesan cheese and cook for a further 10 minutes.
You should be able to dish up and serve straight away with the last of your parmesan on top.
If you have already had your healthy extra A options for the day you will need to syn the fresh parmesan.
Enjoy as your main meal or with a protein portion and speed on the side.
